“Balak, balak!” gritavan con tono agresivo los repartidores cuando se querían abrir paso entre las calles de la medina de Fez. En esta parte de la ciudad no se puede circular en coche y por eso los carros, las mulas y los burros son la única alternativa para transportar la carga (pieles, verduras, frascos de perfume, cocacolas, botellas butano, etc) y hacer el reparto a las casas y los comercios. Y entre los callejones laberínticos —dicen que hay más de nueve mil— a veces se huele el olor de la flor de naranjo y otras el herdor de las tenerías de piel y la pesta de paja podrida dla cagarrutas de burro. Y grabar un documental entre esta mezcla de olores, de gente y de casas no fue fácil. Desentonábamos y nos sentíamos observados. Muy a menudo nos paraba algún policía vestido de paisano para pedirnos el papeleo. Y suerte tuvimos del documento de autorisation de tournage que habíamos pedido en el Centre Cinematographique Marocain. Los guardas se miraban el papel, lo leían con cara de incredulidad y nos dejaban hacer con cara de perdonavidas.
Este documental también lo hubiéramos podido grabar en Marrakech, pero si terminamos a Fez fue gracias a Dolors Bonfill, una enfermera de Roquetes que vive con un pie en las Tierras del Ebro (Catalunya) y el otro en Marruecos. Hace ocho años que Dolors abrió el Riad Tafilalet, un peuqeño hotel integrado a la medina de Fez, en un rincón altivo a tocar de la muralla. La casa, del final del siglo XIX se articula alrededor de un gran patio interior, donde confluyen el comedor, una pequeña biblioteca y las escaleras que conducen traen al hammam y las habitaciones. Pero uno de los espacios más interesantes de la casa es la azotea con vistas sobre los tejados del casco antiguo. Vale la pena subir durante la puesta de sol, a la hora en que las mezquitas ponen en marcha los cánticos y llaman a los fieles.
Y cuando cae la noche, los aromas de la cena embriagan el olfato de cualquier huésped con un poco de hambre. En el comedor, las mesas ya están paradas a la manera marroquí, llenas de platillos que permiten entretenerse comiendo de aquí y de allá, renovando cada momento los sabores. Olivas adobadas con especies, zanahoria con canela, calabacines con cebolla… Y después de esas ‘tapitas’ llega la hora de el tagín de cordero con ciruelas y almendras o del cuscús condimentado con salsa de cebolla y pasas alrededor del recaudo de legumbres y hortalizas. Vaya, que mientras escribo este texto ya se me remueve el estómago y me vienes ganas de volver a Marruecos. Que sea pronto, si Dios quiere. In-xa-al·lah, como dicen ellos.
